Hazard Analysis and Critical Control Points
Current EU legislation requires that all businesses producing food must have a documented food management system in place (FMS). This must be based on the principles of Hazard Analysis and Critical Control Points (HACCP). The Council now offers a practical one day HACCP qualification training course to help caterers comply with the law. The course provides a through understanding of how HACCP based procedures can be applied in a catering context.
It also provides flexibility to suit different types of businesses. Candidates are required to submit an assignment which covers all the steps involved in preparing a food item or meal.
It is strongly recommended that candidates for this qualification have recent Level 2 Award in Food Safety in Catering.
Successful completion of the course and assessment will enable candidates to understand:
the legal requirement for businesses to adopt a food safety management procedure based on the Codex HACCP principles the controls that need to be put in place to ensure the safety of food and how these should be monitored
the seven basic principles of the HACCP system and how these can be equated to a food safety
